Ingredients

Ingredients
  • 4 medium bell peppers halved and seeded
  • 1 pound 93/7 ground turkey
  • 1 tablespoon oil
  • 1 small diced onion
  • 2 teaspoons grated ginger
  • 2 garlic cloves grated
  • 1 tablespoon tomato paste
  • 1 teaspoon garam masala
  • 1 teaspoon cumin
  • 1/2 cup frozen peas
  • 1/2 teaspoon kosher salt
  • Cilantro and lemon

Method

Instructions
  1. Heat oven to 425°F. Microwave pepper halves covered with 2 tablespoons water for 4 minutes; drain.
  2. Heat oil in an oven-safe skillet. Cook onion 3 minutes, then add ginger, garlic, tomato paste, garam masala, and cumin.
  3. Add turkey and salt; break it up and cook until no pink remains. Stir in peas and cook until the filling reaches 165°F.
  4. Fill pepper halves, place in a baking dish, and bake 10 to 12 minutes until peppers are tender.
  5. Finish with cilantro and lemon.

Notes

  • Measure ingredients before heating the pan.
  • Avoid crowding; use two batches when necessary.
  • Taste before adding final salt because packaged ingredients vary.
  • Cool meal-prep portions promptly in shallow containers.
