  • 1 pound 90% lean ground beef
  • 1 teaspoon neutral oil
  • 1 small yellow onion finely chopped
  • 3 garlic cloves minced
  • 1 tablespoon finely grated fresh ginger
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon sweet paprika
  • 3/4 teaspoon kosher salt
  • 2 tablespoons tomato paste
  • 2 tablespoons water
  • 4 small garlic naan
  • 1 1/2 cups shredded green cabbage or dry slaw mix
  • 1/2 English cucumber thinly sliced
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 2 tablespoons chopped cilantro

Method
 

Instructions
  1. Stir together the yogurt, lime juice, and half the cilantro. Refrigerate while the beef cooks.
  2. Heat oil in a 12-inch skillet over medium-high. Add beef and press it into an even layer. Leave undisturbed for 2 minutes, then break it into small pieces.
  3. Cook for 3 to 4 minutes more until browned. If more than a tablespoon of fat collects, spoon it off.
  4. Add onion and cook for 3 minutes. Stir in garlic, ginger, cumin, coriander, garam masala, paprika, and salt; cook 45 seconds.
  5. Add tomato paste and water. Cook for 2 minutes, stirring, until the beef is evenly coated and no loose liquid remains. Verify the beef reaches 160°F.
  6. Warm naan according to the package just until flexible. Fill with cabbage, cucumber, beef, lime yogurt, and remaining cilantro. Fold and serve immediately.

Notes

  • Use a wide skillet and avoid stirring for the first 2 minutes.
  • Drain high-fat beef before adding spices so their flavor stays clear.
  • Keep washed vegetables dry.
  • Offer sauce at the table if wraps will sit longer than a few minutes.
