Ingredients

Ingredients
  • 1 bag 20 ounces frozen sweet potato fries
  • 1 teaspoon neutral oil only if package directions recommend it
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon kosher salt plus more after tasting
  • 1/2 cup mayonnaise
  • 1 teaspoon garam masala
  • 1 small garlic clove finely grated
  • 1 teaspoon finely grated lime zest
  • 1 tablespoon lime juice
  • Pinch of cayenne optional
  • 2 tablespoons chopped cilantro

Method

Instructions
  1. Cook the sweet potato fries directly from frozen according to their oven or air-fryer package directions, arranging them in one layer with space. Use the high end of the time if needed for crisp edges.
  2. Meanwhile, stir mayonnaise, 1 teaspoon garam masala, garlic, lime zest, lime juice, and cayenne until smooth. Refrigerate until serving.
  3. Mix 1/2 teaspoon garam masala, cumin, and salt in a large dry bowl.
  4. Transfer the fries to the bowl while hot and toss quickly. Add only the package-recommended oil if the seasoning will not adhere.
  5. Finish with cilantro and serve immediately with aioli on the side.

Notes

  • Never thaw frozen sweet potato fries.
  • Cook in two batches if the basket or pan is crowded.
  • Do not add lime juice directly to the fries.
  • Taste the package seasoning before adding salt.
