  • 1 bag 20 ounces frozen shoestring fries
  • 1 teaspoon neutral oil
  • 1 teaspoon chaat masala
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon garam masala
  • Pinch of cayenne optional
  • Kosher salt only as needed
  • 3/4 cup plain Greek yogurt
  • 1/3 cup finely chopped cilantro
  • 1 tablespoon lime juice
  • 1 small garlic clove finely grated
  • 1 tablespoon water
  • Lime wedges for serving

Method
 

Instructions
  1. Cook the frozen fries directly from frozen according to the package directions until deeply crisp, using the higher end of the stated time if needed.
  2. While they cook, stir yogurt, cilantro, lime juice, garlic, and water into a thick dip. Refrigerate until serving.
  3. Mix chaat masala, cumin, paprika, garam masala, and cayenne in a large dry bowl.
  4. Transfer the fries to the bowl while very hot. Drizzle with 1 teaspoon oil and toss quickly with the spices.
  5. Taste before adding salt. Serve immediately with the cilantro-lime dip and lime wedges on the side.

Notes

  • Do not thaw frozen fries.
  • Use two pans if one would be crowded.
  • Warm the tossing bowl with hot water, then dry it completely.
  • Serve citrus wedges separately.
