  • 1 medium compact cauliflower
  • 2 tablespoons neutral oil
  • 1 teaspoon sweet paprika
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • 1 small garlic clove finely grated
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Lemon wedges and cilantro for serving

  1. Preheat the air fryer to 380°F. Remove cauliflower leaves but keep the core intact. Cut two 1-inch center steaks; reserve loose florets.
  2. Mix oil, paprika, cumin, coriander, turmeric, garlic, salt, and pepper. Brush both sides of the steaks and toss any loose florets with the remainder.
  3. Arrange in one layer. Air-fry 8 minutes.
  4. Turn steaks carefully with a wide spatula. Cook 6 to 8 minutes more, removing small florets earlier, until browned and a knife slides into the core with light resistance.
  5. Serve hot with lemon and cilantro.

Notes

  • Do not discard loose florets.
  • Cook one large steak at a time if needed.
  • Use a wide spatula for turning.
  • Add lemon only at serving so the surface stays browned.
