  • 1 cup frozen sweet green peas no need to thaw
  • 2 tbsp neutral cooking oil avocado, canola, or vegetable oil
  • 1 tsp whole cumin seeds
  • 1 large yellow onion finely diced, about 1.5 cups
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger finely grated
  • 1 green serrano pepper finely minced, optional
  • 1 can 14.5 oz / 411 g petite diced tomatoes (with juices)
  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp Kashmiri chili powder or sweet paprika + pinch cayenne
  • 1/2 tsp ground turmeric
  • 1 tsp garam masala
  • 1 tsp kosher salt adjust to taste
  • 1/4 cup water or low-sodium chicken broth
  • 1 tbsp fresh lemon juice
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

Step-by-Step Instructions
  1. Heat 2 tbsp oil in a large skillet or sauté pan over medium-high heat. Add cumin seeds and let them sizzle for 20 seconds until aromatic.
  2. Add the diced onion and cook for 4 to 5 minutes, stirring frequently, until golden brown. Stir in minced garlic, ginger, and green serrano pepper; cook for 60 seconds.
  3. Add the ground turkey to the skillet. Use a wooden spatula to break the meat into small bite-sized crumbles. Cook for 4 to 5 minutes just until the turkey is no longer pink.
  4. Reduce heat to medium. Add ground coriander, ground cumin, Kashmiri chili powder, turmeric, and salt. Stir constantly for 30 seconds to coat the meat in spices.
  5. Pour in the canned diced tomatoes and 1/4 cup water or chicken broth. Bring to a gentle boil, then reduce heat to medium-low.
  6. Cover and simmer for 5 minutes, allowing the lean turkey to absorb the tomato juices and cook to an internal temperature of at least 165°F (74°C).
  7. Uncover and stir in the frozen sweet peas. Simmer uncovered for 2 to 3 minutes until the peas are heated through, bright green, and tender-crisp.
  8. Remove from heat. Stir in garam masala and fresh lemon juice. Garnish with chopped cilantro and serve hot over steamed basmati rice, with warm roti, or spooned into toasted slider buns.
