  • 1/4 tsp Kashmiri chili powder
  • 2 to 3 tbsp unsalted butter softened to room temperature, or mayonnaise for frying

Step-by-Step Instructions
  1. In a small mixing bowl, toss together the diced red onion, green bell pepper, minced serrano, cilantro, chaat masala, and Kashmiri chili powder until evenly spiced.
  2. Lay the 4 slices of bread on a clean work surface. Butter one side of each slice generously with softened butter (or mayonnaise for an extra-crispy exterior).
  3. Flip two slices over so the buttered side faces down. Distribute half of the grated cheese evenly across both slices.
  4. Scatter the spiced vegetable mixture evenly over the cheese layer. Top with the remaining grated cheese (this 'cheese sandwich' technique glues both sides of the bread securely to the vegetables).
  5. Place the remaining two bread slices on top, buttered side facing up.
  6. Heat a large nonstick skillet or cast-iron griddle over medium-low heat. Place both sandwiches in the skillet.
  7. Cover the skillet with a lid or baking sheet for 3 to 4 minutes. The trapped steam melts the interior cheese thoroughly before the bottom bread burns.
  8. Remove the lid. Once the bottom is golden brown and crisp, carefully flip each sandwich with a wide spatula. Cook uncovered for 2 to 3 minutes on the second side until deeply golden and the cheese is oozing out the sides.
  9. Transfer to a cutting board, let rest for 60 seconds, cut diagonally with a serrated knife, and serve immediately with store-bought mint chutney, Maggi sweet & spicy sauce, or classic ketchup.
